Mexican Chicken and Taco Soup

Good evening!

I'm posting 2 meals tonight because I have some catching up to do. This cold weather has made me super lazy! I get home, take care of some school work, and spend the majority of the evening under a blanket on the couch! Here is what we ate Monday night. Kevin cooked one of his favorite meals, Mexican Chicken. This recipe comes from Weezy, Kevin's grandmother on the Covington (JoAnn's) side of the family. It is a really good and pretty simple recipe. And no surprise....it reheats really well!!

Mexican Chicken

6-5 lbs. chicken breast (we just debone a rotisserie chicken and use that)
1 cube butter/margarine
2 onions chopped
2 cans cream of mushroom soup
2 cans cream of chicken soup
2 cans chopped green chilies
1 lb. cheddar cheese, grated
1 package doritos (or your favorite tortilla chips)

Melt the butter in a sauce pan. Saute the onions, add the green chilies and then soups. Make layers of chips, chicken, sauce and cheese in a casserole dish. Bake in the oven on 350 degrees or until bubbly.

Kevin and I like to eat this with "Scoops" chips. They dip really well into the hot, cheesy casserole.

Here's what we ate tonight!! I had a super long and tiring day at work. This soup worked so well because it was quick, hot and delicious!

Taco Soup

1 lb. ground beef (we started substituting ground turkey breast)
2 onions-chopped
1 28 oz. can crushed tomatoes
1 10 oz. can rotel tomatoes
1 15 oz. can Trappy's Pinto Beans
1 15 oz. can Trappy's Pinto Beans w/ Jalapenos
2 15 oz. cans shoe-peg corn (sometimes we use regular corn)
2 10 oz. cans beef broth
1 pkg. taco seasoning
1 pkg. ranch salad dressing--buttermilk recipe--DRY

Saute the onions with the meat and season to taste. Combine the meat, onions, taco seasoning, dressing mix and tomatoes in a large crock pot or stew pan. Cook about 10 minutes. Add all remaining ingredients with liquids. Cook 2-3 hours on low. You can also cook for 30 minutes if you are short on time! We, again, eat this with tortilla chips and cheese! It is YUMMY!!
